For those of you wanting to add a little zest to your kale chips, look no further! Below is one of my favorite recipes with a healthified dipping sauce. This is a super simple recipe with lots of flavor that can be made for a snack, or served as a side or app. This recipe will cost you (only) a little over $1.50, whereas buying prepackaged kale chips from the store will cost around 4-5 times the amount!
Typically, aioli is made with mayonnaise. I subbed the mayo with a low fat Greek yogurt and added a bit of lemon for a citrusy twist. This recipe takes a total of 10-15 mins as you can whip up the aioli while the kale is baking.
Kale has been a more popular green over the last 10 years, but believe it or not, it's been around for more than 2,000 years! It's full of nutrients and antioxidants, and has over 100% the RDA of vitamins A and K!
I love buying a bunch of kale every week or two, and adding it to smoothies, scrambles, soups, or using it to make my favorite kale chip recipe.
Crispy Kale Chips with Lemon Aioli
INGREDIENTS:
1 Bunch Kale
1 T Olive Oil
1 tsp Salt
1/2 cup Plain Greek Nonfat Yogurt
1 tsp Lemon Juice
1/2 Lemon Zest (optional)
DIRECTIONS:
Preheat oven to 350 degrees.
Spray baking pan with non-stick cooking spray or line with parchment paper.
Chop kale leaves into bite-size pieces, while carefully removing any rough stems and spread onto pan.
Drizzle with olive oil and sprinkle with salt.
Place in oven until edges are slightly browned.
While the kale is cooking, make your aioli. In a small bowl, whisk yogurt, lemon juice and zest. Sprinkle with a pinch of salt, to taste.
Lastly, drizzle the aioli over the kale chips or dip lightly and enjoy!
